Broccoli crust pizza

This lives somewhere between a pizza and a giant open sandwich, it’s very easy to prepare and makes the perfect lunch or light dinner. You can top it with anything you have available in your fridge, there are absolutely no rules. Pay attention to getting the edges nice and crispy and adding that extra glug of olive oil in the end.

Ingredients

For the dough

600g broccoli - this is about 2 broccolis
100g almond flour, if you don’t have that you can use plain white flour
30g parmesan
3 eggs
salt and pepper to taste

Toppings

kale
cheery tomatoes
basil leaves
parmesan
good quality olive oil to drizzle
chilli flakes if you want some heat

Method

1. Remove the stems of the broccoli and keep for broccoli soup for another time. They freeze nicely so you can pop them in the freezer. Put the tops of the broccoli in a food processor and blitz until fine but when you can still see some texture and not paste.

2. Add the flour, eggs, parmesan, salt and pepper to the broccoli and mix well.

3. Use a baking tray lined with parchment paper and add your mixture. Spread the mixture evenly and pop into a 200° C oven and bake for 40 min. Brown edges on the dough will be a good indicator that your pizza base is ready.

4. Cover the kale with boiling water and then immediately rinse under cold water. Add a little bit of salt and leave aside for later.

5. Remove from the oven and start adding all toppings, grate some parmesan on top, drizzle with olive oil and chilli flakes and you are done.
