Classic smoked salmon bagel
Truth to be told, if you woke me up in the middle of the night and offered me a bagel I’d be the happiest person on the planet. A few years ago I went to New York and completely fell in love with bagels. On my first day in NYC I discovered Russ & Daughters by accident and I went back every single morning, sat on the same spot at the bar and ordered a smoked salmon bagel. Happy days! The special thing about Russ & Daughters is that they cure their own salmon which really makes it extra special.
Back in Amsterdam I didn’t really know a good bagel place until a friend told me about Flo’s Appetizing. I thought I’d give it a go and since then I’ve been going back almost every week. They freeze perfectly which is good news too.
The combinations are endless but here is my classic smoked bagel with all pickled and spicy extras that make it taste just right.
Ingredients
Makes 1 bagel
1 bagel
schmear of your choice, for this bagel I’m using Flo’s green onion schmear
50g smoked salmon
1 tbsp capers
small red onion
1/2 avocado
a few jalapeños
vinegar or 1/2 lemon
salt
Method
1. I like warming up the bagels in the oven. If you like that too, preheat your oven to 180 C and pop the bagel in there for 4-5 min. While the bagel is heating up you can make the super quick onion pickle. Cut the red onion in rings, place in a bowl, add a pinch of salt and either 3 tbsp of white wine vinegar or a good squeeze of lemon. Give it a good stir and set aside to do its thing.
2. Cut the bagel all the way through and smear the schmear :)
3. Add all toppings and you are done.
