Roasted veggies bowl

This is the easiest bowl when you just want to throw some veggies in the oven and call it a dinner. I love roasting everything at the same time with really simple seasoning of salt and pepper. There’s not rules to the veg you use and I like using whatever I have available at that moment. Feel free to come up with your own version of this bowl. Makes 2 bowls.

Ingredients

For the base
Couscous

Veggies
2 sweet potatoes
2 peppers - colour of your choice
tenderstem broccoli (or regular)
2 eggs

Sause

Yoghurt
Coriander

Seasoning

Ground cumin
Chilling flakes
Black pepper
Salt
Olive oil

Method

  1. Preheat your oven to 200C. Wash all vegetables and dry. I like to peel the sweet potatoes and the paprikas. Once everything is peeled put in a large bowl and season with salt and pepper and cover with olive oil. Mix well and add to your baking tray. Pop them in the oven and roast for

  2. Boil the eggs to your liking - mine are boiled for 8 min which is perfect for a little bit of a raw yolk.

  3. Add the couscous in a bowl, season with salt pepper, add 1 tbsp of olive oil and 1/2 tbsp butter. Cover with boiling water, close the lid and leave to rest for 10 min.

  4. Add a handful of coriander to a blender, add 4 tbsp of olive oil and season with salt and pepper. Blitz until you see the sauce emulsifying. Add 5 tbsp of yoghurt and mix well.

  5. When your veggies are done you can assemble your bowl. Start with the couscous as a base and add your veggies, sauce and egg. Finish off with ground cumin and some chilli flakes if you want some heat.
