Stir fried noodles
What I love about meals like this is that you can vary the recipe based on the veggies you have available. You can use pretty much any type of veggies and the result will be amazing. I used the chilli numbing oil recipe of Yeung Man Cooking which gives such a lovely depth to the allround flavour. This literally takes 10 min to prepare and I find it makes a perfect lunch or a lightweight dinner.
Ingredients
1 carrot
a handful brocolli
1-2 baby bak choy
1 tea spoon sesame seeds / use whichever color you have
1-2 tbsp vegetable oil for frying
noodles of your choice
For the sauce
1 tbsp oyster sauce
2 tbsp soy sauce / I love Tomasu’s soy sauce / If you have dark soy sauce you can do 50/50 because it will give a beautiful dark colour to the noodles
2 tbsp chilli numbing oil / If you don’t have it available you can use chilli flakes
Method
Dice the carrot in thin slices and break down the broccoli in medium sized chunks. Once you start frying everything will cook very fast so it’s good to make sure that you cut the carrots in relatively the same size, and break down the broccoli in about the same size too. This way they will cook at the same time.
Cut the chunky end of the bak choy and wash the leaves
Put together the soy sauce, oyster sauce and chilli numbing oil (or chilli flakes) in a bowl and mix. If you aren’t using the numbing oil I’d suggest that you add 1/2 tbsp sesame oil to your sauce.
Bring a pot of water to the boil and add the noodles. I like to cook them about 1 min less than it says on the packet because once you put them in the pan to with the veggies and the sauce they will cook completely.
It’s best to use a wok or if you don’t have one available use the deepest frying pan you have. Put the pan on high heat and let it get nice and hot. Add the vegetable oil to the pan and add the broccoli. They need a little longer than the rest of the veggies so they go in first. Fry for 2-3 min. Then add the carrots and fry for another 2-3 min.
Your noodles must be cooked at this stage, strain them and add them directly to the pan. Add the sauce and give it a quick stir to coat everything. The last step is to add the bak choy which needs about 30 seconds.
Garnish with some sesame seeds and a bit more chilli oil and you’re done.
